Dough:
 2 ¼ cups (280g) flour, plus extra for dusting
  cup (160g) warm water
 2 ½ tsp instant dry yeast
 3 tbsp (45g) olive oil
 1 tsp sugar
 ½ tsp salt
Garlic Butter:
 ¼ cup (55g) vegan butter, melted
 3 cloves garlic, crushed
 2 tbsp fresh parsley, chopped (or 1 tablespoon dried Italian herbs)

By Hand: Combine all dough ingredients in a large bowl. On a floured surface, knead until smooth and elastic (about 5 minutes).
Using a Stand Mixer: Place dough ingredients in the mixer with the dough hook attachment. Mix on low until combined, then knead on high until smooth.

Transfer dough to a bowl, cover with a tea towel, and let it rise in a warm area until doubled in size (approximately 1 hour).

Divide and shape the dough into 12 equal portions. Roll each into a strip and tie into a knot.

Preheat oven to 200°C (convection) or 180°C (fan-forced).

Place knots on a lined baking tray, cover with a tea towel, and let them rise until puffy (about 30 minutes).

Bake for 12-15 minutes or until golden brown. Meanwhile, prepare the garlic butter by mixing all its ingredients in a bowl.

Brush the hot knots generously with garlic butter immediately after removing them from the oven. Serve warm.

Tips:

  • If using a different type of yeast, activate it first by mixing with warm water and a pinch of sugar. Once bubbly, proceed with the recipe.
